Sambar ,sambhar
Ingredients:
Tuvar dar / arhar dar (split pigeon pea)- ½ cup
Soaked for half hour
Water - 3 cups
Turmeric powder - ½ tsp
French beens - 2tbsp
Carrot - 1. chopped
Drum sticks - 7 to 8 small stick
Bottle gaurd- 4 tbsp
Brinjal - 1
Potato - 1 small sized
Oil - 2 tbs
Mustard seeds - 1 tsp
Urad daal/ black gram -1 tsp
Curry leaves -1 tbsp
Hing (asafoetida)- 2 pinch
Dry red chilli - 2
Onion - 1 chopped
Garlic cloves- 3 to 4 chopped
Green chilli - 2 chopped
Tomato - 2 small size chopped
Onion petals - 1 tbs
Turmeric powder - ¼ tsp
Kasmiri red chilli powder / paprika - 1 tsp
Tamarind pulp - 3 tbsp
Jaggery - 2 tbsp
Sambar masala - 2tbs
Salt as per taste
Method :
• Take soaked daal transfer it into a cooker add 3. cup water , turmeric powder.
• Take a small steel bowl. Transfer beans, carrots, drumsticks, bottle gaurd , brinjal & potato into it.
• Place bowl in cooker.
• Add 2 drop oil in daal to avoid water oozing out.
• Close lid and cook it for 4 to 5 whistle on medium flame.
• Take a pan.
• Add oil. Once oil heats up add mustard seeds, urad daal,curry leaves, asafoetida, dry red chilli. Sotay it.
• Add chopped onions. When it gets soft add chopped garlic, green chili. Sotay it.
• Add chopped tomatoes , mashed it.
• Add onion petals ,turmeric powder, red chili powder (Kashmiri),tamarind pulp . Mix it well. Cook it.
• Add jaggery (optional) ,cooked veggies & sambhar masala . Mix it well.
• When oil gets separate add cooked daal.Add more water if needed. It depends on you how thick or thin you want.
• Add salt mix & cooked it untill boiled .
• It's ready.
